This pork loin has wonderful flavor and is incredibly moist. We served this for dinner with friends and all of us were a bit hesitant at the parsley shallot sauce (it's so green!, but it was wonderful and accents the pork perfectly! You must try!

My son stated that this was probably the most tender pork he has ever had! What a statement. Great recipe. Parsley sauce was tangy and a perfect compliment with the pork.

This was fantastic, the meat was so moist and succulent. This was so simple to make, just run the herbs/oil/garlic on and pop in the oven!

This was very easy and a great dish. My husband has an herb garden so I had all fresh herbs to use. He likes sauces and thought this one was great. Will definitely fix this again.

The pork was so tender an flavorful. I loved the sauce as well. It was so fresh tasting and complimented the pork so well. Will definitely make again!

I made this last night for my husband and myself. It was great. Even the sauce which a few said they didn't like was awesome. We had it with the sweet potatoes (which have less carbs than white potatoes and they were fabulous too. This will a regular in our repretoire.Thanks Ellie, I love your recipes.

This was one of the best pork recipes I have ever made. I was a bit afraid the suace would be overpowering so I changed it a bit by adding less mustard. Was absolutely delicious, and simple. Perfect for a fancy yet down home company meal. Thanks!

The pork itself was really nice, but we were not a fan of the sauce. It was very strong, and since it is all raw, it was just overwhelming.
