    This recipe was so good that I passed it on to my best friend along with a cup of bulger so she could try it. Who knew that eating health could taste so good!

    Great recipe. I used red bell pepper and white onions because that's what I had, and it was very good. I don't understand why the fat content is so high for this recipe. Anyone know?

    I'm working to teach myself to "like" new foods. I realize that it takes practice and an open mind to learn to like new types of foods. I've never been a fan of any types of beans or pea type textures. So I decided to try this recipe. It is an excellent segway into lentil lovin'! I followed it almost to a T but I made the mistake of trying to save $ by using some frozen basil I had tucked away last CSA season. Big mistake! The basil was soggy and icky in texture. I also found that my chives were moldy in the fridge and instead of spending another 3.00 on another blister pack of chives in my grocery store, I bought a cheap bundle of scallions (green onions. The green scallions were less than a dollar and tasted great in this recipe. Thanks Ellie for your continued encouragement to love healthy foods. I appreciate it!!!

    This makes a great side dish. It has a great texture and plenty of flavor. Even my husband, who is not very interested in "healthy" food, liked it.

    I had barley in the pantry and wanted to use it up, so used it instead of bulger. This was so good, I ate it all week and am going to make it again this week with bulger. Perfect lunch with a little feta or parmesan sprinkled on top.

    I was hungry so I used what was in the cupboard. I didn't have lemon zest and I can taste how it would make a difference. It's a good amount of food also. I can have quickie left overs when I get home late from work - instead of potato chips!

    Tastes fantastic. My variation includes: garlic sauteed w/ onion, red and yellow pepper. Will serve w/ roasted vegetables. Thanks, Ellie.

    I served this today at a luncheon. It was so flavorful! I used 2 shallots instead of onion and omitted the basil. The beans cook really fast; don't overcook them! Will make again real soon and double the recipe.
