    I've made 2 batches of these biscotti, and they do have a very nice flavor. On both occasions the center of the log was raw after the first bake of 25 minutes. They did cook completely after the second bake. These cookies are exceptionally hard to slice, and on each batch I ended up with 8-10 intact biscotti, while the rest broke into pieces. The olive oil undoubtedly contributes to this, although it does provide a healthy fat. In the future I may use the flavor components of these biscotti with a more traditional butter-based dough. I eat sweets sparingly and when I do I'm not looking for health food. A very nice recipe worth trying. I do freeze biscotti and they are very handy to keep in reserve.

    This isn't the best biscotti I've made or tasted, since it's more cakey than crispy. However, I did make some substitutions that might have affected that: just used all purpose flour instead of the whole wheat pastry flour; didn't add lemon zest, lemon juice, or vanilla extract, subbed slivered almonds for pistachios, and added 1/2 tsp anise seeds. I suspect because there is less sugar, they aren't as crispy and hard...the way I prefer biscotti. I also think it had too much baking powder, as I can taste that quite strongly in the finished product.

    LOVE LOVE LOVE! first off, my entire house smelled amazing..like lemon and vanilla and..nuttyness..second they were simple and delicious. plus the healthy factor?! I give it five stars

    My substitutions undoubtedly made this recipe a disaster for me. I didn't have pastry flour, so I used all-purpose. Then, I like almonds far more than pistachios, so I used raw almonds instead. Between these two substitutions, I wound up with a pile of sweet-smelling crumbs. VERY discouraging and disappointing. I didn't think that these two small changes could make such a difference, but I ended up with cereal while everyone has ended up with beautiful cookies.

    I just made these yesterday...my husband loves them. They were a little hard to cut without cracking, but besides that, they are delicious.

    i cant find the pastry flour anywhere..so not sure what to use in its place. im gonna try whole wheat flour..ive made biscotti before and they are awesome..

    I've never made biscotti before, and this recipe was real easy. It came out great. I followed the recipe exactly. I am not a great baker, but this recipe made me out to be one.

    Absolutely delicious. I'm always trying to eat healthier and this will now be favorite cookie cause just can't give them up. This was my first time to ever bake biscotti's. Now after reading the reviews and have an idea or two will experiment. The next time I make these I will try an egg substitue. Hope it works! I didn't have a lemon handy when I made them so just used bottle lemon juice thus I can only imagine how good they must be when one has all the ingredients. Oh yes, I didn't have pistachio's either so used walnuts, turned out really good. Thanks so much.

    Just read the recipe and the 12-1-10 question about where are the nutritional information. Click on all the reviews, then look on the right side of the screen for the info. It does seem that it is not shown in the usual place. I haven't made the recipe yet, but I will very soon and gave it a 5 anyway.

    I am wanting to try this recipe. Do we have the nutritional information for it somewhere? I am not seeing it where they give the recipe--Which is wierd, because Ellie always seems to have this on her site. I am really watching my calories and need to be able to account for the calories in my daily intake. Thanks.
