Wow I made these and put some of them in the freezer for an occasional snack. They were easy to make (Only used one cookie sheetand everyone loves them. You can smell the lemon when you take them out of the freezer.

I made these with dried cranberries instead of pistachios for a seaonal twist. These are very yummy and I would definitely make them again.

This was easy and delicious. I split the dough in two and put pistachios in one half and dried cranberries in the other. Both are great. You must have a sharp bread knife to keep them from crumbling when slicing.

I was skeptical about making these but have always wanted to try a biscotti recipe. Ellie made it look so easy I thought I'd give it a shot. The result:
easy and delicious!! Be sure to only zest the yellow part of the lemon or else it will be bitter. The olive oil seemed strange to use, but overall the biscotti were very rich and flavorful. I followed the recipe without substitutions and was very pleased with the result. We buy a box of biscotti about once a week... needless to say we will be saving lots of money and preservatives by making these from now on.

The recipe was very easy and the honey and pistacio is a great combo but overall the flavor was very bitter. Im not sure if it was due to the olive oil or lemon zest. I also found the doughto be very crumbly when I sliced them diagonally even though I followed directions fully.

I saw Ellie make these this weekend and thought they looked really good. I made them today and they were delicous. I think the only thing I would do is chop up the pistachios before adding them in because they were hard to cut with the knief after the 1st bake.
