I have made this recipe several times, both as written and with some changes. I usually add some cinnamon and pepper to taste. I think this is an easy, simple, and tasty recipe.

This recipe is FANTASTIC! I make it once or twice a week, and never grow tired of it! I only make a few slight changes: I keep the olive oil to 2 Tablespoons, but increase the honey to 3 Tablespoons. I also lightly dust with cinnamon before putting them in the oven. So Good!

This recipe rocks. Just found it a month ago and have already made it multiple times. It is a weekly staple now. I've made it as is but also with my favorite modifications: extra virgin coconut oil instead of olive oil; vanilla extract instead of lemon juice; once I used half honey, half agave, and it was still great. Can't wait to try maple syrup as the sweetener, and ghee as the oil - I will keep experimenting since I make it so often!
I have had success using three lbs of potatoes instead of two, increasing none of the other ingredients except the oil by one more tablespoon.

These were fantastic, and so easy to make! I made them as a side to accompany pork tenderloin. I followed the recipe, but used a bit more salt for my taste. With a parchment paper lined baking sheet, they cooked evenly with very little cleanup. The flavor of the sweet potatoes concentrates beautifully with the roasting. I'll definitely make these again!
