I wanted a side dish for the fish dinner I was preparing that would not take too much time. I always have sweet potatoes in the fridge and this healthy recipe was the perfect fix!

I'm always looking for a new way to prepare my weekly sweet potatoes and this recipe is dynamite! I usually prefer savory preparations, as I like the natural sweetness of the sweet potatoes to come through. The honey added a little sweetness but it was tempered by the olive oil, lemon, and salt. Delicious! I cooked mine at 400 degrees for 45 minutes and set the oven to Low Broil for an additional 5 minutes. I like mine to be golden brown outside and soft on the inside. I could eat this recipe everyday - Ellie Krieger is wonderful!

Very tasty but I did sprinkle a small amount of brown sugar and cinnamon on it right before removing the dish from the oven. It was nice to find a recipe that doesn't require a pound of butter and marshmellows to make it sweet!!

This recipe is simple and so delicious. It re-heats well also. I have made it several times already.

This was easy to pre-prepare and stick in the oven while the rest of dinner was cooking. A good sweet potato option without all the cream, butter and sugar.

This was so deliciously easy. I wouldn't change a thing. I personally went back for a 3rd helping.

Very simple to fix and taste great. I don't really like baked sweet potatoes - so this is a great way to fix them.
