    Very good and super easy! Tyler Florence had a recipe similar to this but it has a lot of honey with some cinnamon. I added some cinnamon to this recipe and it was fabulous!!!! Thank you for listing the nutritional value. I wish there was more recipes on Food Network that had the nutritional value. Thank you Ellie, another great recipe!!!

    Oh my goodness, I think these are the best sweet potatoes I've ever eaten. And I've made all the different kinds of recipes you can think of - you know, the fancy schmancy recipes with brown sugar and crumbly toppings (and yes, even the tried and true marshmallow topping. But, in all honesty, this recipe beats all of the others, hands down. The taste was out of this world! Just lovely, decadent, and there were no leftovers. Thank you Ellie! You ROCK!

    I would give this 10 stars if I could. I first made it according to the recipe - very good but then thought I'd add a little something as others did. So next time I microwaved 5 very large sweet potatoes (left the skin on then cut them into smaller slices, added 3 sliced Jonathan apples (left the peel on and one medium sliced onion (took the peel off of course. Since the potatoes were partially cooked the slices were bigger than the apple and onion. Then I mixed is all together with the olive oil, honey & lemon and baked it covered for an hour (stirring a couple of times then uncovered for about 15 minutes. WOW. What a taste - fabulous and easily frozen in individual servings with my vacuum sealer machine. I forgot the salt but didn't seem to miss it. Really good dish - thanks Ellie.

    You get the true taste of sweet potatoes with this dish. It is not overly sugary sweet, but it is the essence of sweet potato.
