So yummy and healthy! I had to cook them a little longer than an hour though--the wait was worth it.

My family loved these sweet potatoes. I am always looking for new ways to make them and this recipe is definitely a keeper. I only changed a couple of things. One was to add a tad more oil to the glaze as it was too thick to toss with the potatoes. Then I also took the advice of some other reviewers and bumped up the heat a bit and cooked for only 45 minutes. Perfect!

I think these have replaced the traditional Thanksgiving sweet potatoes (with the nuts and marshmallows as my favorite way to eat them! And to top it off, they're healthy and easy to make too.

These are good with so many things. Good for you and super yummy - my kids and hubby gobble them all up. I will make these many times over.

This was so simple, and so flavorful. I could not ask for anything better! I made it two nights in a row, and will continue to make it regularly in the future. Look no further for a sweet potato recipe! This one rocks. Thank you, Ellie! :

This really brings out the sweet goodness of the sweet potato without drowning it in butter and sugar as per usual recipes. People always ask for the recipe.

Made this yesterday- it was absolutely delish!! Used orange juice instead of the lemon and it turned out yummy. Also used a dash of pepper for a lil kick. Hubby gave it the thumbs up. Definitely recommend this recipe for the 'efficient chef'!

Honestly, this is a very tasty recipe! I varied it by using a small glass container, cutting up 1 sweet potatoe, drizzled it with Olive oil, sprinkled with salt, drizzled it with honey, stirred, covered with the lid, and then popped it in microwave for 6 minutes. Scrumptious!! I will never make drowning-in-butter-and-sugar yams again!!!
