    Both my boyfriend and I LOVED this recipe. He did his best imitation of "What About Bob?" ('mmmm' 'mmmm' 'mmmm' 'mmmm' 'mmmm'

    Sometimes, Ellie's portions are tiny, but not this time. We had plenty of leftovers, and it was just as good reheated in the microwave the next day.

    I couldn't find my cayenne, so used 1/4 tsp of Cajun seasoning instead. And I substituted some chicken andouille sausage for the ham, for a little more authentic flavor (and not too much more fat.

    This is a real keeper. We'll be making it often.

    This recipe is as good as any other jambalaya recipe I've ever made. Once again, my 17 year old sons loved this recipe. How can you go wrong when the taste buds of a growing boy agree with something? And the fact that I'm giving them HEALTHY foods rather than some of the other garbage they could be eating is just a big plus.

    I made this and got two meals out of it. Both sets of diners gave rave reviews. I think I used 1/2 t of cayenne but folks liked it all the same. I also used leftover smoked pork and threw in some chicken to round it out. I had happy diners.

    This was as easy and delicious as it looks. I modified it to what I had on hand--kielbasa instead of ham, and diced tomoatoes w/ green pepper/celery/onion. I've made it twice and it's been a a hit both times, we will definitely add this to our normal rotation in our house.

    This is a wonderful dish. I wouldn't change anything about the meal. It made great leftovers for lunch the next day.
