    This recipe looked really beautiful, and simple, if not a little time consuming (waiting for the vegetables to roast. I made this to accompany Ellie's macaroni and 4 cheeses (which did not impress me. I wasn't too enthused about these vegetables. I've made simple roasted vegetables before with just olive oil, salt, and pepper, but these were a little bland. I did add more salt, but didn't want to negate the health benefits by overloading them. I just felt they were missing something; maybe more fresh herbs and a tad more olive oil would help. I wouldn't make this again.

    My family enjoyed these roasted vegetables very much and I enjoyed preparing them. The taste was just has flavorful as the colors. They were great!

    I'd never cooked beets before so I appreciated that part of this recipe. They turned out really well and I'll definitely do it again. But the rest was, unfortunately, nothing special. It was actually quite bland aside from the visual impact of the "jeweled" colors of the roasted vegetables. I think we'll skip this one next time.

    This is the most wonderful way to make vegetables - be creative with your vegetable selection - add butternut squas or sweet potatoes, parsnips, onions - Beautiful on the table, delicious and healthy - great.

    These veges were literally enjoyed by ALL! Even my hubby and I who do not care for beets or brussel sprouts in any way, shape or form enjoyed this version! The beets were earthy and delicious, the brussel sprouts were flavorful and not sulphury as I remembered them in my youth, the carrots were divine! I highly recommend this recipe, simple and delicious. I was asked several times on T-Day for my recipe!
