I like a few other reviewers had mixed results. My lemon part came out fine but my crust was another story. I tried baking it like another reviewer suggested but when I cut into it, the crust came apart. I normally do not have that problem when I bake cheesecakes? Hmm?

These were really delicious! I used an already prepared graham cracker crust but did bake it for about 7 minutes before putting in the lemon mixture, No one believed that this was a lower fat version. They were cut more like slices of pie than icebox squares but not making the crust from scratch was so much easier. I now keep graham cracker crusts and condensed milk in my cabinets just to make this whenever I need to

My family and I loved the taste of the bars. I used lime juice instead and it still came of lovely. Nice mellow taste. I made the mistake of using 14 crackers instead of the 7 whole ones. Obviously the pastry part (bottom did not set, but we rolled pieces of the custard in the crushed crackers and still was delicious. If looking for a less tangy and mild sweet treat, this is it!

These are delicious! I must say, that I agree with some of the reviewers in that this is more of a dessert, and not a bar that you can pick up and eat with your hands. After I read that some other reviewers found that the graham crust fell apart, I decided to throw my crust in the oven for 10 minutes, as I would do for a cheesecake. It turned out perfectly.

Just okay. Had a weird texture that I didn't care for - more mousse-like. Flavor was lacking.

Tastes sooooo good and decadent! Everyone agreed that these are absolutely yummy and did not notice that these are slightly lower in calories than most desserts. It is small piece, but it is all you need!
A few tips:
- My cream cheese was at room temperature, but I would go back and almost liquify it in the microwave, just so there are absolutely no lumps.
- Don't decrease the number of graham crackers in the crust, because it will be way too thin! To help bind it together, I didn't want to add too many calories with extra butter. I added 1 Tbsp. of yogurt since I always have it handy, and it worked!

This recipe is delicious! I read the reviews about the crust falling apart and, since I was having company, I bought the 8-serving size graham cracker crust. I baked it as directed on the package, and it came out perfectly. If I make it with the homemade crust, I will also bake that at 350 degrees for about 8 minutes. Just be sure to incorporate the lemon zest completely because I had a few clumps of zest in the filling. I also made it the night before and let it set up in the fridge for about 24 hours. I do think that the recipe will be a little soft to serve as bars but just serve with a fork!!! Will definitely make again!!!

I love the flavors in the dessert. it definitely has potential after tweaking the graham cracker layer by adding more butter or reducing the graham crackers. You also have to make sure the cream cheese is at room tempurature. Mine wasn't quite what it needed to be and came out a little lumpy. Still tasted great though! I featured it on my food blog here http://damegoodeats.blogspot.com/2010/09/lemon-icebox-bars.html
