    This recipe is delicious! I read the reviews about the crust falling apart and, since I was having company, I bought the 8-serving size graham cracker crust. I baked it as directed on the package, and it came out perfectly. If I make it with the homemade crust, I will also bake that at 350 degrees for about 8 minutes. Just be sure to incorporate the lemon zest completely because I had a few clumps of zest in the filling. I also made it the night before and let it set up in the fridge for about 24 hours. I do think that the recipe will be a little soft to serve as bars but just serve with a fork!!! Will definitely make again!!!

    I love the flavors in the dessert. it definitely has potential after tweaking the graham cracker layer by adding more butter or reducing the graham crackers. You also have to make sure the cream cheese is at room tempurature. Mine wasn't quite what it needed to be and came out a little lumpy. Still tasted great though!     I just made these and I tasted the filling. Out of this world! Because I read the reviews and saw that people were having trouble with the crust, I decided to make it following the recipe, but I baked it for 8 minutes on 350. It is seemingly staying together. The test will be when I cut into them. They are setting up now in the fridge so I will write another review letting everyone know if baking the crust worked!

    Eggbeaters is a pasteurized product and entirely safe to use anyway you care to. I use it for scrambled eggs (with grated cheese on top, omelets, eggnogs (no cooking there, with all my baking recipes. It's a wonderful product and is a great help with our high cholesterol problems. Hope this helps....

    I made my usual graham cracker pie crust recipe for the base and it worked beautifully. This is a good recipe for a good dessert. If it's too high in calories for you, make something else!! I do not serve diet food to guests....

    This recipe includes, "egg product (such as egg beaters". It has been my understanding that any recipe containing raw egg product needs to be cooked to be safe to eat. I love Ellie's healthy eating suggestions and recipes. This recipe look healthy and tasty, but I'm worried about eating the uncooked egg product. Maybe my understanding of using raw egg product just needs to be updated? Will really appreciate someone explaining to me how a recipe with uncooked egg product can be safe to eat. Thank you.

    These are not the lowest calorie things in the world; of course the recipe never claims to be low cal... You get a 2x2 in piece and it is 155 calories (if you make sure you get the fat-free condensed milk!. To me calories and 'healthy' go hand in hand, so, just something to think about. A few things to keep in mind, make sure your lemon zester is very fine, otherwise the texture is pretty off putting. And the crust definitely falls apart, so you can add more butter if you don't mind the added calories or, like I did, I put the crust on the top instead! The flavors are great! Perfect for spring and summer!

    The only reason I'm giving this 4 stars is because the crust was more like "dust" and I followed directions exactly. I also watched her make it after i made them (I have the episode recorded. I patted the crust firmly to the dish and refrigerated it until ready to fill it. The crust isn't attaching to the lemon filling at all. It is just a bunch of crumbs. I can't figure it out. Aside from the crust issue, this was so easy to throw together and the lemon flavor is perfect. It doesn't even taste like it's healthy. I really like it, but need to figure out the crust. I will eventually make it again.
