    I was really excited about this recipe when I saw it on Ellie's show. But...mine did not come out creamy at all, and it was kind of bland. The only way to make it just okay was to add salt, but that defeated the purpose of making it healthy. Perhaps my problem was that I didn't use the exact right cheeses....but I don't know if I want to try this one again.

    Great recipe. I made it with fresh butternut squash instead of the frozen variety and actually got a better taste out of it than the first time I made it (boil squash until mushy, drain, and mash like mashed potatoes add 1tsp brown sugar for sweeter taste. Everyone that ate it at a barbeque like it -- including the kids!

    My family loved this recipe. I didn't tell them that the butternut squash was in it until their bellies were full, they didn't care that I snuck in the vegetable, they liked it anyway.

    I reduced the squash by half as I am not a fan, and it was not bad.

    Not a cheese fiesta, but if it healthy it should not be.

    I will add, I would make it again, but my hubby and brother won't touch it. I guess knowing there is squash in there, even if you can't really taste it, puts them off. Oh well!!

    We watched the show where this recipe was featured. This recipe has absolutely no flavor. Boxed mac and cheese tastes better. Don't waste your time with this one.

    This recipe is perfect for those comfort-food cravings! True, it is not ultra cheesy, but it has such a unique taste. I also added a bit more cayenne pepper than the recipe called for. It gave it an extra kick and really brought out the flavors of the cheese. I'm going to make it again tonight!

    Based on reading other reviews, I wonder if it mattered what type of squash was used. No matter how much additional cheese I added (so much for healthy!, I could not get the smell or taste of squash to diminish. I served it to my husband, who loves mac and cheese, and he politely said it was "good." He had two small helpings, but he normally eats more of my other mac and cheese recipe. I would not make this again, at least not with the amount of squash recommended.

    As others have said, this didn't particularly taste like cheese. It was creamy and it did have a nice consistency, but had I served it to my husband, he certainly would have said something tasted "funny." For as much squash as was in it, it didn't taste overwhelmingly like squash, but it also wasn't a direct substitute for the more traditional bechamel-and-cheese sauce.
