We loved this yummy dish! My husband stuck his nose up at first when he saw what was going in it, but then ended up almost ending it all, my 3yr also loved it. This will be a regular from now on. Thanks Ellie!!!

My kids and I watched this and they begged me to make it for dinner tonight. Well, I loved it the light tastes of winter squash, cheese and slightly crunchy topping was great. However, my kids were not impressed. My oldest said she was hoping for a more cheesy texture. That's why only 4 stars

I liked this recipe and will make it again. It's not like regular mac 'n cheese in that it's not super cheesy, but the squash gives it the color and creaminess of cheese. I think you could serve it to a guest and they'd never know the difference. The crumb topping was very nice.

I substituted whole grain macaroni to get even more fiber into the dish and it worked well. I also cut it in half because I was cooking for myself and it still made plenty.

Next time I'll dial up the salt and spices, plus cover the dish with foil while baking (at least for a while. The sauce is pretty wet when you put it together, but it really dried up during the baking process. I'll also shred a little cheddar on the top to get it cheesier.
