    Was a little too dry for me, but I used penne since I didn't have macaroni and I think that may have been the problem. Will make again using macaroni. Couldn't even taste the squash though.

    We absolutely loved this dish with a few minor changes. We doubled the cayenne, added 1/2 tsp of smoked paprika and added garlic. Totally hooked and will make this frequently. Thank you Ellie for giving us a nutritious and delicious spin on a classic!

    I liked the flavor...a little too spicy from the cayenne but over all it was delicious and light not heavy. Does not freeze well.

    Barely any flavor, doesn't taste anything like mac and cheese, and had a weird texture (I think because the ricotta, and is just awful. I'm a health nut but I'd rather consume the calories of Ina's mac and cheese than eat this.

    If 0 stars was an option, that is my rating. This was a horrible recipe. I followed it as written but it was the worst thing I've ever made. I actually had to throw it out.

    This was so yummmyy!! I used 1.5 packages of squash (moslty becuase one half had paper stuck to it I couldn't get off haha but it ended up being the perfect amount!! It is definately not quite as cheesy as the full-fat version which can be expected but I actually like it better!

    My kids and I ate it, but it took them and LONG time (husband barely tried it. It was grainy from the ricotta. You could taste the squash. It did not taste like there was any cheese in it. Hardly any real flavor.

    I made this recipe and was very disappointed. It was very easy to make and looked so good when it finished cooking. But the taste was very bland. I am not a lover of lowfat dishes however I continue to try to reduce my family's fat intake. This dish did not pass the test for my husband nor my 9 and 12 years old. We all thought it tasted odd (and they didn't even know it had the squash in it.

    This was pretty tasty. My guests were 3 and 5 yrs. old so they were pretty discerning. I added a bit extra cheddar and substituted mozzarella for the Monterey Jack, since it's what I had on hand. I also used a 15 oz. can of butternut squash puree. It came together nicely and had really good flavor. I would make this again.
