Directions

Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.

Delicious, easy recipe. I used frozen mango. It is cheaper and I always have it around for smoothies. I cut each chunk smaller while they were still frozen which was much less messy than fresh mango. Wow!!!! This was really fabulous and so quick and easy. Delicious over grilled fish. I made it with a few changes. I used habanero chile instead of the jalapeno because I like spicier food. I also added a diced avocado which added a nice creamy counterpoint to the habanero. Unfortunately I forgot to buy cilantro, so I made it without, but I wouldn't recommend it. This was a great one, this took 1st place in a Salsa challenge last night against 12 other entries. I liked how this was but it was too mangoy for me so what I did add extra was one diced tomato, one and a half avocados, and doubled the amount of red onion. I did add the cucumbers but I let them marinade for an hour in a cooled mixture of 1/3 cup rice vinegar 1/4 cup sugar 1/4 cup water 1/4 tsp salt 1/4 tsp ground black pepper I boiled everything until the sugar was completely dissolved then let it cool in the fridge, once cold I added the cucumber. This mixture has a sweet taste, not too sweet though, and gets absorbed into the diced cucumber (I added the diced red onion in here too. After marinating use a fork and transfer to the bowl with the cut mango. This adds a great sweetness to this that adds to the salsa. Once again, a good base recipe but in need of a little tweeting for my palate. First of all, I omitted the cucumber because I didn't have one on-hand and I don't particularly care for them. I did add some roasted red pepper and a little fresh, small dice. It added some intensity to the flavor, color for the presentation and some texture to the _mouth-feel_. As with a lot of the recipe posted here, I used it as a base and then made it my own, so to speak. It was great over grilled salmon stuffed with fresh Dungeness Crab, after all, 'tis the season. I followed recipe exactly, and added a can of black beans (rinsed. I sauteed some shrimp, warmed some corn tortillas, added this salsa, avocado slices and grated cheddar and made shrimp tacos. This recipe is VERY good! I pan seared a couple of Ahi Tuna Steaks with seasonings and used the mango salsa as a topping for the tuna. Very tasty. The mango makes the salsa nice and sweet. I have a few pieces of advice before trying this recipe, however. A couple of reviewers substituted red bell peppers for the cucumber. I don't recommend taking out the cucumber. It adds a nice mellow flavor and tones down the other intense flavors in the mix. I also tried a little more than a tablespoon of lime juice, maybe two, and it added a more citrusy flavor, while some said they added the zest of the lime which probably works the same. Finally, I want to stress that this recipe uses red onion which adds a VERY strong onion flavor to the salsa. If you're not a big onion fan, use much less than a third of a cup, or take the onion out completely for a sweet, mellow salsa! item not reviewed by moderator and published

I happened upon the video of this recipe and prepared it as instructed. To my taste, the result was good but not great. I paired it with a grilled steak that had been prepared with the Blackening Spice Rub Recipe that can be found here on the FN. What makes this find here on FN dot com so great are the many excellent comments and suggestions that have been posted about the original recipe. There were 40 comments when I looked. I hope to try at least half of them before the end of this wonderful summer weather. So far, I have added both a chopped red bell pepper AND the cucumber for even more great color and added crunch. I also added grated lime from the limes I juiced and then I added salt, fresh ground black pepper, and then agave nectar to taste. My next try will be with avocado and then with ginger. And next after that will be to prepare with ripe papaya, if still in season by then. We had a delicious mango salsa at the Baton Rouge in Toronto that was served with crab cakes, and I was looking to make something similar at home. I found this recipe and the only thing I changed was to use diced red bell pepper in place of the cucumbers - which was how it was prepared at the restaurant. WOW! This recipe is even better than the one we had! The colors are beautiful and the flavors are amazing. I served it atop pan fried creole tilapia to rave reviews. Perfect recipe for entertaining as it's a feast for the eyes and the mouth - and super easy to make ahead of time. I make this salsa to use with my shrimp burritos. I'm more a fan of the sweet than the spicy, so I did leave out the peppers. Other than that, I made it exactly as described... if anything, I used more cilantro than it called for. For the burritos, I grill up some raw, peeled shrimp. I lay out a large tortilla and pile it with chopped romaine lettuce, shrimp, mango salsa, and some cheese. Awesome recipe.....I was looking for something with avacados because I had two in the refrigerator that needed to be utilized. It ends up that they were very ripe so I mashed them with some lime juice and lime zest and some roasted garlic, salt and pepper. I spread that on some toasted bagettes and topped it off with this salsa. I made the salsa exactly as called for. This was absolutely heavenly. I made this recipe last night and tweaked it a wee bit. I added an extra half cup of cucumber and a tablespoon of grated ginger. I used ginger that I had peeled and froze - easier to grate that way. I have made Ellie's Mango Salsa from her book, Small Changes Big Results, and I love it! I lost that book, so I went looking for the recipe on foodnetwork.com. I found what I thought was the same recipe at first, but then I noticed one (big) difference. The recipe in Ellie's book is identical to this one except it calls for avocado instead of cucumber. I can't describe how delicious this is! Especially with homeade pita chips made from pita bread (also a recipe on this site). I am the worlds pickiest eater, ESPECIALLY when it comes to salsa.
