    We loved this! We served it as a topping for Jerk Chicken fajitas. The cucumbers provided a nice crunch, and the jalapeno was a nice contrast to the sweet mango. We'll definitely make it again!

    LOVE this recipe - I've made it twice already since I discovered it two weeks ago. I made it pretty much exactly as written and served it on fish tacos (tilapia or cod with pickled cabbage, and rice and beans. So refreshing!

    I make this without the jalapeno (I'm not a big fan of spicy/hot and it is amazing. I also just throw this on romaine for a yummy salad (also great with chicken added. This is all our friends favourite salsa when we have everyone over for our home made fish tacos.

    This was a great one, this took 1st place in a Salsa challenge last night against 12 other entries. I liked how this was but it was too mangoy for me so what I did add extra was one diced tomato, one and a half avocados, and doubled the amount of red onion. I did add the cucumbers but I let them marinade for an hour in a cooled mixture of
    1/3 cup rice vinegar
    1/4 cup sugar
    1/4 cup water
    1/4 tsp salt
    1/4 tsp ground black pepper

    I boiled everything until the sugar was completely dissolved then let it cool in the fridge, once cold I added the cucumber. This mixture has a sweet taste, not too sweet though, and gets absorbed into the diced cucumber (I added the diced red onion in here too. After marinating use a fork and transfer to the bowl with the cut mango. This adds a great sweetness to this that adds to the salsa.

    Enjoy, you don't have to do the marinade though

    I just made this, delicious! I've thought about putting cuke in salsa before for the refreshing taste and the crunch factor. This was perfect with the soft mango just right. I will definitely make this again.

    This salsa is refreshing with the cilantro a big hit!!!!!!!! It is even better the next day when all the flavors come together

    just made this for my spanish class and it is wonderful! i added a tablespoon of honey and only put in 1/6 cup of the cilantro
