I used avacados instead of cucumber and had it on grilled jamaican rubbed chicken sandwiches. Fantastic! I believe the other reviewers who raved about it on fish/seafood that said it was great are probably right. Can't wait to try it myself. And such an unbelievably simple recipe.

I make this salsa to use with my shrimp burritos. I'm more a fan of the sweet than the spicy, so I did leave out the peppers. Other than that, I made it exactly as described... if anything, I used more cilantro than it called for. For the burritos, I grill up some raw, peeled shrimp. I lay out a large tortilla and pile it with chopped romaine lettuce, shrimp, mango salsa, and some cheese. It is absolutely fabulous, and one of the easiest recipes in my book!

First time making this. Substituted tomato for the cucumber and OMG...fabulous!! We served it over Mahi Mahi (although I ate it by the spoonful even before dinner!! This is a winner and can't wait to try it with avocado as one of the other reviewers mentioned!

I made this and used it on fish tacos. YUM! It was so good that after the tacos were gone, my husband and I took spoons and ate the rest of the mango salsa right out of the bowl. This was so delicious and healthy and the colors were a feast for the eyes.

Awesome recipe.....I was looking for something with avacados because I had two in the refrigerator that needed to be utilized. It ends up that they were very ripe so I mashed them with some lime juice and lime zest and some roasted garlic, salt and pepper. I spread that on some toasted bagettes and topped it off with this salsa. I made the salsa exactly as called for. This was absolutely heavenly. Thanks for sharing this.

This is a great recipe. I have this so many times. I make it with fresh mint in place for the cilantro leaves. Really good. I topped my grilled scallops and sole with it. Really good with crackers too. This is a keeper!!! Thanks Ellie!!

I made this recipe last night and tweaked it a wee bit. I added an extra half cup of cucumber and a tablespoon of grated ginger. I used ginger that I had peeled and froze - easier to grate that way. We served it with corn chips and then again with seared scallops - I will double the recipe next time!

When I need dinner NOW, sometimes the mango isn't ripe, but the papaya is. It's a great substitution.
