    One of the easiest recipes I have made for a large crowd. A real healthy dish with a refreshing taste. The textures of the dish and the unique flavor will keep me turning to this recipe time and time again.

    Served this along with Ellie's warm spinach and artichoke dip at a luncheon with a sort of tapas theme. Everyone loved them. It is important to take all in one big bite as that where the wow flavor it. Everything Ellie makes is fabulous and looks pretty too.
