Great versatile recipe. I, too, thought it was too tomatoey but let it simmer longer than the recipe called for and all the other flavors came through!! I followed the recipe except added the only meat I had on hand - beef tenderloin. It was amazing. Will add other good-for-you-veggies next time and probably skip the pasta noodles as well.

Easy, quick and delish. This is a great go to vegetarian meal. Better than I have had in Italian restaurants, very hearty!

Very easy to put together, and tastes even better than the Italian restaurant that we ate it at and inspired me to cook it. Loved that there is no spinach.

This was delicious! I replaced green beans with yellow and green zucchinis. There needs to be more broth in there though. When I reheated it, I just added some water to it and it still tasted great! I would definitely use this recipe again.

This is a great recipe and an easy one to adjust to anything you have on hand. I have used parsnips, bell peppers, butter beans, pinto beans and they all tasted wonderful. You can basically use whatever vegetables or bean you like and it turns out yummy:

Excellent! I took the advice of some of the other reviewers and added spinach, an extra can of beans and didn't add the noodles to the pot. I don't like kidney beans, so I used pintos. I substituted zucchini and yellow squash in place of the green beans. I also added some cooked meatballs, quartered, during the last 5 minutes of cooking.

Have mercy this is fabulous! I did take note of other reviews and added zuchini and some spinach and another can of kidney beans and more broth to compensate. My carnivore husband ate 2 huge bowls and said he never missed the meat. Also I used the frozen little french green beans from Trader Joes and they cooked up without being crunchy. So so good!

I made this recipe tonight. My green beans were still very crunchy when all other veggies, even the carrots, were not. The flavor was amazing. Next time I will adjust my cooking time and put green beans in before the carrots and celery. Otherwise, a very very tasty recipe!

Prep time longer than 15 minutes!! Very good. I added 6 oz sweet Italian sausage (1 link from Fresh Market that I cooked separately, and added toward the end. Next time I will precook the fresh green beans 10 minutes before adding to the soup. They were still crisp while everything else was not. Used cannellini beans instead of kidney beans and added a bit more salt. Deliciousl

This soup is so very good. I didn't have green beans, so used frozen mixed vegetables instead of the green beans. It has so much flavor that it doesn't need salt. Super healthy, and people love it. Most of the ingredients are usually here on hand at home, so it's very inexpensive and easy to make.
