Great soup. I added some spinach in the last 3 minutes of cooking and it turned out perfect. Thanks for the wonderful recipe.

Easy to make and delicious. I followed the recipe and added zucchini, cannellini beans and some spinach. I have made this delicious soup many times. I will continue to make it. It's a keeper!

Guess I had different expectations than the other reviewers. This tasted nothing like the minestone served in the Italian restaurants or in the homes of my Italian friends. The broth tasted like pure tomato juice. Next time I will leave out the crushed tomatoes. There were not enough beans - in fact it was difficult to find them. I will also use less macaroni.

My whole family loves this soup. My husband is a meat eater and he says he does not miss the meat in this dish!!!!

After reading the reviews I decided to make this version. Love it. Has great flavor and easy to make. I thought I had green beans in freezer and didn't so I threw in zucchini when I put in my pasta. I also used large bunch of fresh basil. This is a crowd pleaser. I cannot wait to try it after it has seasoned for a day.

Have been looking for a good minestrone soup recipe with no luck, until I found this one. It was fast, easy, and yummy! I substituted zucchini for the green beans, and added one can of cannellini beans and some fresh spinach. Think I will reduce the amount of macaroni the next time I make this.
