Have been looking for a good minestrone soup recipe with no luck, until I found this one. It was fast, easy, and yummy! I substituted zucchini for the green beans, and added one can of cannellini beans and some fresh spinach. Think I will reduce the amount of macaroni the next time I make this.

I hardly ever review recipes, but I had to make an exception for this one. This soup is absolutely delicious, and so easy to make. I added zucchini, as per other reviewer's suggestions, but other than that, followed the recipe word for word. Served with some crispy bread, my guests were licking their plates afterwards. And it's the first soup I've ever made! Thanks Ellie, for keeping it healthy and tasty.

Was great! After reading all the other reviews I also added zucchini, and spinach. I was delicious, and healthy. The fresh basil def adds a nice touch at the end. yum

I used zuchini instead of green beans and diced tomatoes, Italian style, with garlic, basil and oregano..... very good!!

I have never made soup before, but this turned out to be so easy! I followed the directions given and the final product tastes unbelievable!!

My favorite minestrone. This is a more "tomatoey" minestrone, but I like tomatoes so I loved it. My husband likes a version with more broth and less tomato but since I am cooking, this is what we had. It tasted like a meal version of a bloody mary, without the vodka of course. Changes I had to make because of what was/wasn't in house:
*fewer green beans since I didn't have enough, but augmented with diced zucchini - yum.
*less broth because I only had 4 cups.
*28 oz can of crushed tomatoes & 14 oz. can of chopped because it is what I had but really yummy anyway.
Next time I'll plan better and will follow the recipe more exactly. But will still add zucchini since we have a ton of it from our garden!

Super easy and delicious. No green beans available so added chopped zucchini near the end. Looking forward to seeing how it freezed.
