    Prepping Now.Reading over the Recipe 3 Times for accuracy on Our part.Noticed the Carrot{s} "diced".So,Can be Done in 30 mins.Otherwise,al dente.We know the Time for Pasta we use takes 12 mins.Fresh Green Beans can have a "raw" taste.May require longer Time in the Broth&Tomatoes mix.The Beans tinned,Can Go Last moment~their cooked.No Salt/Pepper till end.why?Cooking Increases Their Potency.Saving the "parm"for testing Saltiness.Please Read Recipes more than Once.We over looked important details.Going All salt free on Both types of tinned Tomatoes.Watch Olive oil,can burn at higher temps.We are using Canola for a clean taste.Finishing with Olive Oil Is Better.This is a soup ripe for using items of your preferences.

    I only used 4 cups of chicken broth, 1 can of crushed tomatoes. I added a zucchini. It tasted pretty good a day after it was made. I might try to add some tomato paste to it next time. Great and easy recipe!

    This Minestrone soup recipe was delicious! Very easy to make and full of flavor, but the best thing about it is that it is so healthy! The only thing is that the pasta was a little over cooked with the heat of the soup. Next time I will leave it a little uncooked so it finishes cooking with the heat.

    This is a great, hearty soup. I didn't have elbow pasta so used rotini and think its fine. I also didn't have dried basil and don't miss it. It didn't take long at all to make and not a lot of prep time with lots of chopping. Doesn't feel like a "healthy" soup but feel good getting the beans into my diet.

    I love a good minestrone though I've never attempted to make it myself until now. Just came home from a vacation which is the only time I normally have some. Thanks Ellie for a great recipe, it taste exactly like what I would get. I added some fresh tomatoes, Italian Seasoning and since I did not want to waste anything I also used the celery leaves and it came out great!

    I am very particular about my minestrone and have tried several recipes and this is by far my favorite! It is delicious and so packed with yummy veggies. I added some chopped dark greens (spinach or kale, whatever I have on hand and a few chili flakes and this soup is perfect!

    I followed this recipe rather closely, substituting Great Northern Beans for kidney beans (my wife doesn't like kidney beans. I also browned pancetta with the onions. The result was a soup that is dominated by tomatoes. Next time I make this, I'll cut down on the amount of crushed tomatoes and add zucchini. The flavor of this soup improves after a day or two.

    Delicious...I've made this 3 or 4 times now and change it up sometimes. Adding chicken is good (although it techinically isn't minestrone then...adding more celery and carrots. Re-heats well.
