I made this today, on account of a blizzard. It seemed like the perfect day for soup! I made a few alterations: I added a little more crushed tomato, dried parsley, and dried chives. I don't really believe in putting pasta in the soup directly--I always cook pasta separately and pour the soup OVER it. My reasoning is, you don't risk the pasta soaking up too much soup, and you don't end up with mushy pasta. (There's no reason pasta can't be al dente even in soup! I'm considering throwing in some cubed avocado before serving, just for another texture (that, and I love avocados!.

This was AWESOME!!!!!!! I wouldn't change a thing! However, I put in more noodles than she called for and I will not do that again....the noodles expand a LOT once it sits in the warm soup. Even though it doesn't seem like a lot of noodles that she has listed in her recipe, I would recommend sticky with that quantity!! Follow her recipe and you won't have a problem! I made corn bread to go with it and it was the perfect meal for me and my daughter!! I even shared with my step-dad and he keeps asking when I'm making more...it's only been a week! :

This was a really yummy and easy recipe. I think this might be the third or fourth recipe that I've used from Ellie Krieger...she never lets us down. Healthy, tasty, and fast. The green beans add a nice touch. I do plan on making this soup again.

Because I live alone, I halved the recipe omitting the 28 oz can of diced tomatoes and 14 oz can of crushed tomatoes. Instead I used a 14 oz can of diced. This was one fantastic soup. Thank you Ellie for a great soup recipe. This is now a weekly favorite.
