Super rings! I also used Panko instead of potato chips and they were delicious. Plus the Panko is healthier than the potato chips. Great way to have a comfort food w/o all the fat. Yum!

I made these with panko, since I didn't have baked chips. I seasoned the panko with a little seasoning salt, but other than that followed the recipe exactly. They turned out perfect, crispy and delicious. You'll never miss the fried version. Can't wait to make these again.

These were great. I used home made whole wheat bread crumbs. I will make this again.

These were great! After reading the reviews, I did make the suggested changes; used panko instead of chips, cut the cayenne in half, divided the crumbs into two bowls before coating to avoid the crumbs getting too wet and clumpy, and used chopsticks to dip and coat the rings. I dropped the oven temp to 375, and just watched them, turning them and spraying them again at the halfway point. They came out really crunchy and delicious, with tender (not mushy or stringy onion inside. My husband said they were better than deep fried, and he LOVES onion rings. I agreed - they tasted great and I didn't have that sick, "Oh god, what have I eaten?" feeling afterwards. I know, it seems like a lot of modifications to the original recipe, but it was really just tweaking - the jumping off point was a strong recipe. I will definitely make these again.

Surprise, surprise...a yummy onion ring that you don't have to fry! I had some friends over to try new some new "healthier" recipes, and this was one of them. The onion rings came out so good, and everyone was surprised how were crunchy they actually were. My oven runs hot, so I cooked them at 400 degrees & I had to add some panko bread crumbs to the potato chip mixture since "my friends" had eaten a lot of the chips during prep. Other than that, the recipe is a keeper. Thanks Ellie! These were the hit of the party.

Amazing recipe. I used gluten free breadcrumbs. These turned out with a thick crispy crust, just like fried onion rings I remember from my pre-diagnosed days. I will be making these over and over and over again. Thanks for a great recipe!

These onion rings were awesome!!! I would have given it a 5 star rating but I changed one of the ingredients after reading the reviews.
I used panko bread crumbs instead of potato chips (didn't have them on hand.
Used chopsticks to transfer the floured onions from the wet to dry batter.
Lowered the temp to 350 and baked them for 30 minutes.
Will never buy store bought onion rings again!!!
    Yummy!
(don't skip on the cayenne, they were not too spicy at all

I followed the recipe exactly as given and I thought they came out fabulous! I will try the panko bread crumb alternative since I do not always keep baked potato chips on hand. Thank you Ellie for offering wonderful healthy alternatives to the foods that we love!

Oh darn, should've checked the reviews -- love Alphacook's chopstick idea for dipping. My fingers were a mess and transfering rings from buttermilk to crumbs made the crumbs 'wet'. Rings were just okay, nothing great. Wish I'd used Panko instead of chips. They did crunch-up but I wouldn't make them again.
