I used what I call "dry, gag you, stick in your throat, boneless, skinless chicken breasts" As you can tell, eating healthy is an issue for me, but I'm trying. Because of my schedule, I made the yogurt mix first, added some chopped garlic and cayenne pepper, tossed in the chicken and put it in the refrig a couple of hours before actually doing the breading. I used the cereal, cracker, seed mix called for in the recipe and baked for about 30 minutes. Well, they weren't "dry, gag you, stick in your throat" at all. They were moist, crunchy, tender and wonderful. My very picky and diet concerned 16 year old daughter had 2 pieces...she hasn't had 2 pieces of anything for years. My husband loved it too. The next day, I sliced the remaining piece over mixed greens added some light salad dressing and had a great lunch. Loved it!

This is the crunchiest, moist & flavorful chicken EVER!! You must try this recipe, I tweeked it a bit by using fat free greek plain yogurt & the fat free buttermilk. My Boyfriend called it "magical chicken"! Really excellent, thank you Ellie for a healthy alternative!

This is such a good recipe for making chicken fingers or chicken tenders. I cut boneless, skinless chicken thighs and breasts into strips and marinaded them in the yogurt mixture. I added some honey to the marinade, nearly doubled the amount of mustard and yogurt (as others have suggested and used 1 whole egg instead of the yolk only. The marinade sat for 1 hour which was perfect to season the chicken and help to get the coating of crackers and cereal to stick. I baked it for 40 minutes in a convection oven at 325 degrees F. The chicken tenders were moist on the inside and crunchy on the outside. My husband (who dislikes what would be called "health food" says he liked the chicken! He couldn't believe the topping had corn flakes. I'll definitely make this again for my husband and kids. Thanks, Ellie, for a great and easy-to-follow recipe!! It is a keeper!

I made this chicken the other night and everyone loved it. My father, who doesn't eat anything healthy, went back for thirds! I used non fat greek style yogurt, instead of the low fat regular yogurt. it came out delicious. This recipe is a keeper.

I just made the Oven Fried Chicken and it turned out great! Everyone loved it. I used Frosted Flakes and it was delicious. It was so easy I would recommend it to anyone.

I made this recipe without telling my family it was healthy and they loved it. I don't crush the corn flakes and crackers very fine, I leave bigger pieces and the chicken gets really crispy. Have made it several times.

I made this chicken last week and I must say that it was a nice alternative to traditional fried chicken. I do not think it will take the place of fried chicken, however for a healthy option this will do the trick! I cut the leftovers into strips and threw them in a salad and it made a delicious and easy meal.
