    Thank you Ellie for helping us prepare more healthy food options! I have made french fries a number of different ways with many different seasonings but last night I followed this recipe and thought it was delicious! The only change I made was that I soaked the potatoes after cutting them thinly in a bowl of chilled water for about 45 minutes before putting them in the hot oven. The fries came out perfectly crispy and flavorful, and the best part is that the taste was captured without frying! Many thanks!

    These are delicious and can also be sprinkled with different seasonings and spices with regard to individual tastes. Just a bit of thinking ahead means there is no need to buy the frozen fries.

    as I peel the potatoes, I place them into cold water bowl next to me.
    after peeling all potatoes, I remove one whole potato at a time, to cut them lengthwise in 1/2 inch pieces, and place the cut pieces back into the water bowl where they stay for 40 minutes minimum, so starch can be drawn out.
    .
    after the 40 minutes, is a good point to start the oven to the 450 degree temp.
    .
    then, I remove the cut pieces and lay them onto paper towel covered cookie sheet, cover with more paper towel, to pat the potatoes dry of excess water.
    .
    then, I put the cut pieces into another bowl and sprinkle olive oil/ canola oil [your choice] and little salt and pepper, and toss the pieces.
    .
    then, spray the cookie sheet with spray oil of your choice.
    lay out the cut pieces flat onto the cookie sheet.
    .
    insert cookie sheet into top rack of the pre-heated oven [450 degrees].
    pray. (lol
    check on the fries about 1/2 way through, possible need to turn them once.
    .
    CAUTION: remove cookie sheet using oven mitts....
    .
    I use tongs with black, flat silicon ends to turn the fries and to remove the fries from the cookie sheet.
    .
    voila!

    These fries were delicious! I didn't feel guilty about eating them because I knew they were' loaded with unhealthy fats and fried. Be sure to flip the fries in the middle of cooking so that all sides get crispy. I will definitely be making these again with a homemade burger!
