    When watching your waist size it's so hard to feel like you can indulge w/o emotional issues....well I know they are only potatoes but they are GREAT! This is a fabulous side with the Green Bean Salad and Pork Au Poivre.

    These mashed potatoes were good, but pale in comparison to the full fat versions, in my opinion. Also, didn't love the consistency of the Yukon gold - will maybe try another potato next time.

    These were so yummy!! I was skeptical as I usually add a whole stick of butter to mashed potatoes - you don't miss the butter at all!! Super easy too! I cut out a step and just put the milk/buttermilk mix in the microwave for 30 seconds - this worked perfect!

    My husband and I loved this recipe. We could not tell that there was no heavy cream or lots of butter used. I thought they had great flavor as long as you add the right amount of salt to taste. What I loved was that when I was eating them they didn't seem heavy to me. They were very flavorful but light at the same time. Whenever we have mashed potatoes, this is the way we will go. LOVED THEM! My husband grated the parmesan so there may have been a little more than called for but it was great and the parmesan didn't overwhelm the potatoes! Thanks Ellie!!

    Not a speck of butter in these potatoes and NOBODY missed it. Amazing! But...umm...where's Ellie been lately? Please don't tell me that food network cancelled yet another healthy show. And this is the best one yet. Hopefully Ellie will return soon.
