My friends and family love this recipe. The first time I made it, I thought it was good but a little bland, but my friends loved it. I made it for my dad for Father's day and he loved it- I still thought something was missing, so when I made it for Christmas morning brunch I sprinkled the bread with Apple Pie Spice before pouring the egg mixture in. I also added a little bit of the Apple Pie Spice into the brown sugar & cinnamon mixture too and that seemed to do the trick. I also added a little extra vanilla, as mentioned in some of the reviews. When I'm not able to get fresh peaches, I have also substituted Peach Pie Filling, which worked great too. When I used the pie filling, I didn't put it on top overnight, I waited until I was ready to bake the casserole.
Its a really easy recipe for someone who is domestically challenged like myself, I would definitely recommend!

I followed this recipe exactly and it was terrible. I LOVE french toast. This was not french toast, didn't even taste anything like french toast. It was mushy beyond recognition and the peaches didn't even help. I ended up having to throw it out because I couldn't even bribe people to eat it. I really wanted to like this recipe but I couldn't talk myself into trying it again.

I read all of the reviews and they were so mixed I decided that I had to try this for myself. I followed the recipe exactly. I even measured the thickness of my bread slices. I did take some advice and added a tiny bit more vanilla. I got up on Sunday morning and put this in to bake. When 40 minutes passed, I could see it was still very goopey. I continued to bake it until it look set, approx 1 hr total. It wasn't set. There was nothing crispy about it. It tasted like bread mush with raw egg. The flavor was bland and nothing at all like french toast. I even tried the syrup but it would have been better to pour the syrup in a glass and drink it. I hated that I had wasted my time and my money on the ingredients. Either something has been left out of the instructions or it is meant to be a horrible joke on the public. I love Ellie but this was truely awful.

This was really good, it was even better the second day with maple syrup on it. I put too much bread in the first time, won't do that again, but even then it was good. My family loved this and will make it again

My husband is really supportive when I say, "honey, I am trying something new tonight." However, he is not a morning person and NEVER eats breakfast. When I told him I was making breakfast he rolled his eyes. Anyway, I prepared this dish and he ate 1/3 of it before he went to work. I was trying to explain that it was heathy and he shushed me!!! If you enjoy french toast you must try this dish! It really was that good! I can't wait to try this with other fruit.

I made this with frozen peaches (so no lemon juice and added fresh blueberries the night before. It cooked for me in 40 minutes. I used a pretty dense whole wheat bread in thick slices. It wasn't too mushy and the egg was cooked. I added a little more brown sugar on top just to coat evenly and we loved it. My husband wanted a little more crunch so we added a handful of the "Nutty Granola" (also an Ellie recipe and a couple of tablespoons of light whipped cream. Awesome.

I'm on the Alli diet and liked that this was low fat, however I tweaked it before I even got on here to read the reviews. I made the mix like normal but with low fat soy milk instead and added nutmeg. I used cinnamon raisin bread cut into cubes and diced apples (that I microwaved for 2 minutes to help soften. Then I tossed everything together in a large bowl, let it sit for 15 min while my oven heated up and scooped them into muffin cups in a muffin pan and baked for about 25 min. Very delicious. After they lightly cooled I put 3 in a bowl and poured a little bit of REAL vamilla maple syrup over the top and enjoyed like french toast = 275 calories

It smelled great. It looked great. But, it didn't taste great. It was a very bland, semi soggy egg bake with peaches on top. I was worried about some of the other comments saying that it was too bland and decided to add cinnamon and nutmeg to the egg mixture (about half a teaspoon each. I also added cinnamon to the top, just like the recipe instructed and a little more brown sugar. It still wasn't enough. And I worry that if you try putting more spices in the egg mixture, that it would just taste like spiced eggs as the egg taste was very substantial. I loved the idea of just popping it in the oven as soon as you wake up, but it just didn't work out. I also cooked it a little longer (closer to 55 minutes.

This dish is good, but definitely needs to be cooked longer than 40 minutes...I would say more towards an hour, hour and ten minutes. I cooked it the first time following the recipe exactly and it was a little bland; it needed something. So the second time I added the following to the egg mixture and it was FABULOUS!:

    1 teaspoon of nutmeg
    1 teaspoon of ginger powder
    1 teaspoon of cloves
    1 teaspoon of cinnamon

Add these when you are whisking the egg mixture together and then pour it over the bread. YOU WILL LOVE IT!
