This worked out great for Easter brunch for a big crowd. Easy prep and it tasted delicious.

A friend made this for a bunch of us at the beach and we LOVED it! She changed the recipe slightly in that she didn't add the 4 egg whites. It looked a little soupy, but wasn't. We ate it with Weight Watchers vanilla yogurt.

I made this the night before with nectarines and it turned out delicious. Red nectarines, which are tarter, are best as the white nectarines can be too sweet. Can't wait to try it with peaches nect time I have company for brunch.

Easy to make. For a different spin on French toast this is nice, because it's healthy (fairly. I made it just like the recipe.

I added blueberries and a little extra brown sugar, i know i cheated. it was great. i could taste that it was healthier than my normal cream cheese stuffed french toast, but it was a great start and i highly recommend it. the blueberries were a perfect touch, sort of cobbler'ish.

I made this recipe for Christmas breakfast--it was perfect because all I had to do Christmas morning was pop it in the oven. I had more people than usual for breakfast that day so I used two layers of bread and just added extra milk (about 3/4 c. extra milk I think. It worked perfectly and was delicious. I do suggest getting good bakery whole wheat bread though- our bakery was closed for Christmas Eve so I got decent grocery store bread, but I think good bakery bread would have made it even better. And leftovers were even good!

i love peaches, but i didn't find this dish very good. I used frozen peaches, so maybe with fresh peaches it is much better.

I cooked this dish for breakfast on New Year's Day and all in attendance seemed to like it. That speaks volumes considering the varied generations and taste pallets. It is a light and fluffy dish and I did not find it to be soggy as some have suggested. Perhaps they should have cooked theirs a little longer. It is lightly sweet (certainly not peach cobbler sweet if that's what you're looking for. Of course, healthy eating is just that--healthy. It's all about what you allow yourself to get used to.

My son loved this French toast. I used frozen peaches and they were a bit sour even with the sugar. My friend also made the recipe for her family and they loved it also. She too found the peaches slightly sour. However, her family put maple syrup on top which cut any sour taste for her teens. We used a tiny bit of whipped cream, since it was Christmas.
I actually also added blueberries to half of the pan which was tasty also and healthy. Next time we will try the maple syrup.

I tried this today for a New Year's Day brunch and it turned out perfectly! I don't understand the other reviewers who said it was mushy and "uncooked". I used a sliced baguette exactly as the recipe suggests and the consistency was moist yet the egg misture was firm and "set" -- just like french toast! I cooked it maybe 5 minutes longer than suggested so maybe that did it. Anyway, I highly recommend this. It was delicious and so easy!
