The roasted garlic really made this recipe, I love roasted garlic so I roasted an entire bulb of garlic for this. The mashing with a fork is key. Plus I upped the tomato count, it was a hit!

I cooked this on a whim and didn't expect to much from it but as soon as I tasted it it quickly became a weekly favorite.

This was quick and good. Out of a party of 10, everyone loved it! I can't wait to use my tomatoes out of my garden next time!

This recipe is particularly susceptible to the quality of the ingredients. Namely, you must use real tomatoes instead of mass-produced, flavorless, "tomatoes." Sometimes I substitute dried herbs for fresh herbs, but this recipe absolutely requires fresh basil. With real tomatoes, fresh basil, quality evoo, and quality beans you should be good to go.

I used more tomatoes than the recipe called for, and also added a zucchini cut in half-moons. Of course I also upped the garlic count. By 40 minutes the vegetables were swimming in juice, so I removed them from the baking dish with a slotted spoon. I served them mixed with whole wheat penne.

I'd recommend checking the roasting tomatoes at 20 minutes -- depending on your veggies and/or your oven even that might be enough at 450 degrees.

I read the reviews before making this recipe and took some good advice. I doubled the recipe from the beginning using 1lb penne which doubles everything else but and I even added a few extra cloves of garlic, as I heard it was bland and still only used the one can of beans. When I seasoned them I added some veggie sazon (goya spice for extra zing and sea salt instead of reg salt. I didn't roast the tomatoes and garlic for 40 minutes, as someone said it would dry out, I only did 30 minutes. Also, I didn't have any basil but with all that flavor it wasn't missed. I didn't even need the cheese! The beans were just the right amount and I am completely satisfied! YUM

This recipe was easy and took less time to prepare than I anticipated. I even had time to make fresh pasta while the tomatoes were in the oven. Next time I will probably double the amount of garlic and tomatoes.
