I used wheat pasta instead of potatoes and used fresh herbs. I also skipped cheese. Loved the flavor. My husband enjoyed it too!!! Excellent quick fix.

This pesto is good, but not exceptional. Putting in enough pine nuts and parmigiano would make it not as healthy as this version, but this is a very fresh, tasty pesto. Some tomatoes would be great in the salad, but I wonder if some fresh hot and/or sweet peppers in the pesto might help give another level of flavor to make up for the lack of pine nuts and parmigiano. Personally, I would like more garlic as well.

I found this to be very tasty. I did have very small potatoes and hericot vert, I also added a little thinly sliced red onion. It was delicious and felt very healthy!

This was good but was missing something, add some tomatoes and I'm sure this will be much better. As my husband said not bad but not wow!
