I have made this twice. The second time I used some pesto in the freezer I had made from my garden basil. This really made the dish fast and easy. Either way a great and tasteful change from regular potato salad.

This a yummy potato salad - something different. The pesto is delicious and perfect, it doesn't need any extra oil. The only thing I would note is that this recipe serves probably 3 people, not 8, if it is a main side dish.

We had this as part of a Father's Day cookout. At such a meal, we often have a pesto pasta salad and store bought potato salad. The pesto by itself was easy and excellent, and could be used with other recipes calling for pesto.

The pesto is very good but in my opinion needs to be creamier.
Maybe adding 1/3 cup olive oil instead of 1/4 might be better.

This recipe is simple, beautiful, and delicious! Great to make ahead for potluck, but easy enough for everyday. My family loved it - even my three kids aged 4 and under! This will be a great go-to recipe for the whole summer! Thanks Ellie!
