These muffins were delicious. I also gave them away for Christmas and received nothing but high reviews. I did add a little extra of the spices based on a couple of reviews. Love Ellie and thanks for tasty healthy recipes!

I made these muffins last night and they turned out wonderful. Instead of the pumpkin seeds, I added 1/4 chopped walnuts. For presentation I sprinkled a little walnut on top along with a little sprinkle of raw sugar. Also, I got 14 muffins out of the recipe.

I revised a lot and made this with my 4-yr-old for valentine's day "cupcakes." firstly i used all regular whole wheat flour and plain organic brown sugar. then i listened to other reviewers and doubled all the spices. i didn't have ginger so i used pumpkin pie spice. for the cloves i used allspice and for the buttermilk i used 2% skim milk. also did not use the pumpkin seeds. it made 16 nice sized, well-risen muffins that were delicious. afterwards, i wondered if i could substitute applesauce for the oil, i'll try that next time. just about any spices i think would work, as long as it's doubled to add the flavor. and be careful not to overbake, as the outside may get a little chewy. but as baked about 22 min, it was delicious and moist. my toddler LOVED it.

I made these using extra-large muffin tins. It made a baker's dozen beautiful muffins - so tasty and healthy.

These pumpkin muffins were delicious. Very moist and full flavor. I used all purpose flour because I didn't have wheat on hand. I also didn't have buttermilk but if you put a couple of teaspoons of vinegar in milk and let it set for a few minutes that is a very good substitute for buttermilk. Works every time. I also added semi sweet chocolate chips. Yummo.

first, they are really easy to make! Just requires a whisk to mix everything..Secondly, they are really tasty and very surprisingly moist...Third, they are healthy! Barely any oil and they are as said before, really moist. My toddler loves them with cream cheese on top. I didn't even use the flour that was in the recipe. I have made these several times, and I used organic white flour, and whole wheat flour and they came out great each time.
