    I was looking for a side for a fish taco dinner. The flavors were outstanding and everyone enjoyed. Will definitely make again.

    This meal is healthy, nutritious, satisfying and tasty. If you want to be super healthy leave out the salt as Elie did. However, I like to season my dishes, so I seasoned the broth, the onions and the overall dish at the end. Also, I used dry beans which have no sodium as do canned beans - maybe that is why my dish needed more salt. My husband would rather drop dead than eat vegetarian so I browned up some all natural chicken sausages and tossed them sliced w/ the beans and rice. My toddler ate the beans, but spit out the carrots. HA HA!

    Easy, nutricious and very tasty. I've used jasmati rice and pinto beans to switch it up and deleted the pepper flakes so as to not turn off my 2 year old and it has been a huge hit. This will be one of my regular dishes.

    Take away the carrots and this dish is a very popular breakfast favorite in Costa Rica called "Gallo Pinto". We serve it with a fried egg, bread, and sour cream on the side. It looks like too much for a breakfast but it is so good and fulfilling that you won't be hungry for hours.

    What an absolute hit!! This will definitely be one of my staples. I too had to add a little salt to this. I think next time I'll replace the carrots with zucchini...just to mix things up.

    I think this recipe really lacked in salt and more flavor. I added 2 tablespoons of salsa and some salt and it was better.

    This is a great rice/bean pilaf that I served with the chicken pepian from the same episode. The pilaf was a compliment to the southwestern flavor of the chicken. I'd serve this again with a number of other entrees.

    Very tasty and seasonings were perfect. I use a rice cooker so the rice comes out perfect every time. Very easy preparation. I will double up on the onions & bean mixture because I wanted more to use alone as a side dish.
