    This is very similar to a baked risotto recipe. It was good, VERY thick once it cools. The first serving we had without the condensed milk, and it did need that extra sweetness. The condensed milk went nicely. You can also bake your condensed milk in a water bath at 425 for an hour and 15 minutes to make dulce de leche, and even better topping for it!

    I'm not a fan of Soya Milk, so I was a little reluctant to try this recipe, but I'll try anything with blueberries! There was no taste of soya in the finished product. I skipped the condensed milk to save a few more calories and it tasted very good. Not the same skin you get with a milk rice pudding, but something I will add to my favorites since this is one way I can get soy into my diet!

    I made this with 2% milk, a little extra sugar, no cinnamon stick & and craisins. It was delicious. Another winner!

    Did not like recipe.
    It lacked flavor and was not thick like Rice Pudding should be.
    Maybe that is what you sacrifice for a healthier version of a recipe.

    This rice pudding was very good and comforting. The smell is great! My only complaint was that it didnt thickin up as much as I would like it to...but then again that could have been my fault. Incredible with the blueberry compote and sweetened condensed milk. Very good. :

    Finally! an easy and delicious rice pudding that doesn't have loads of fat and sugar. I add raisins and use butter rum extract in my version! To make it extra creamy, I mix up a sugar free vanilla pudding and serve that on top!

    My rice pudding was not as creamy as the pic.It was good though.definitely make the blueberry compote with it!

    Ellie did it again! I have never heard of making rice pudding out of soy milk but this is fantastic - and healthy what more could you want.

    I have never had rice pudding this good. Just be sure that you use a big enough dish to make it in, or else it might boil over in the oven like mine did today... Other than that, this was great!
