    My husband and I are always on the lookout for GREAT, yummy, Healthy recipes...and this is definitely a hit in our house! I have made it twice now in one week...it makes great leftovers for lunch or dinner the next day too! I also recommend Giadas Linguine with Shrimp and Lemon Oil...another favorite of ours!

    I made this recipe and served it hot as a main dish, to company, and they loved it. I substituted yellow wax beans for the green beans, and I left them whole after I steamed them. I doubled the amount of chicken and the sauce and cut the chicken into strips instead of cubes. I tossed the beans with half of the dressing and the chicken with the other half and then served them on a platter with the beans in the center and the sliced chicken around the edges. I thought the boiled lemon was a nice addition, although I was nervous about using it after reading the other reviews. My company took the recipe home with them, which was a first. A note to other new saffron users, after reading every spice container at the grocery store twice I had to ask for the saffron, which was kept at the service desk.

    I really enjoy this recipe overall. I wouldn't put the boiled lemon rind in though....too much lemon for me. I didn't enjoy the lemon rind texture either. I could see this being a full meal if served with some wild rice. The dressing that?s put on the mix at the end is really delicious and is good for other green salads too.

    It's a shame this dish has gotten poor reviews by people who hadn't tested it, don't be discouraged by the low star rating. I made this recipe exactly as written. The boiled lemon was a great new taste for me, a very mild but bright flavor. I ate it hot for dinner and cold the next day for lunch, and enjoyed both ways.

    I was so glad that I Tivo'd your show!
    This recipe is just delicious.
    I made it this morning for dinner for later and I think in this heat that the chicken salad will be perfect.
    thank you for a new idea in salads.

    It took a lot less time to finish than the hour and fifteen minutes indicated with the recipe. (more like 75 seconds than 75 minutes.
    It looked good on the tube, but when all was said and done, it left me feeling empty.

    I wanted to make the Saffron Chicken and pulled up the recipe on line. Nothing! The Wild Rice Salad came up fine. So did the Peaches w/ Balsamic Cherries. But no chicken. Tried from different avenues but nothing but the nutritional values!
    Who forgot to put it in?
