An easy an elegant solution to a week night dinner, or dinner party. I used whole wheat pita to make the breadcrumbs since I didn't have bread on hand, and it still turned out fabulous.

This recipe is so tasty-fabulous, but I used scallions in mine instead of cilantro ( I'm just no cilantro fan..
The creamy ginger sauce is great too.

I served the salmon cakes with the asian three bean salad recipe that was also shown during the airing of this recipe. And you know what? The dressing from that served as a good sauce for the salmon cakes too, as disvovered by my 8 year old!

Oh and to whoever was looking for a sugar free AND fat free plain yogurt...dannon makes one.

Great salmon cakes...but...we really loved the sauce....ended up using it for a dip for Ina's baked shrimp and sauteed asparagas and snap peas.

These cakes were easy to make and they were absolutely delicious! I'm not crazy about ginger and I'm on the South Beach diet and was unable to find non-fat sugar free yogurt, so I made a modified version of the sauce. I used fat-free sour cream instead of yogurt and left out the ginger. It was very satisfying!
