Love this dish! My family is going vegetarian since 70 percent of hamburger ( which we eat a lot of is pink slime. So thank you so much for this dish!

I LOVED this salad! My husband did as well. I added yellow and orange pepper to this as well. It was very colorful! I served on butter lettuce. It made for great presentation and doubled great as a wrap. It was great the next day day too. Can't wait to make these again. Paired so nicely with the teriyaki chicken thighs. Thanks Ellie!

Dinner is done. My family loved this dish. Will definitely have this again. For this recipe to work it is really important to use rice wine vinegar, substituting it with red wine vinegar or apple cider will ruin it. The rice wine vinegar is subtle in its aroma and taste, best just not make this without the proper ingredients. Get authentic Thai fish sauce as well.

Awesome salad. Very light and refreshing tasting and pretty on the plate. I also added chunks of avocado and toasted sesame seeds. Served it with grilled steak on top. Perfect summer dinner!

Perfect lunch dish. It travels well. I don't understand why salt would be a desired replacement for low-sodium soy sauce, so I omitted the salt and increased the soy sauce. It was super tasty. I also think that fresh avocado cubes works nicely with this dressing.

Made this for breakfast this morning. It was excellent. I did leave off the pesto and used only egg whites. Newly watching cholesterol. Mushrooms are meaty and just delicious.

I made this recipe exactly as written except I used the whole package of Soba noodles (8.8 oz. because 4 oz. seemed skimpy. There were still plenty of veggies to mix in to make the dish balanced. We ate it every hot summer night for several nights in a row, along with the Chicken Satay with Peanut Sauce and Cucumber relish found here. Great meal!
