    This was so good, don't know why it doesn't rate 5 stars from everyone.Quick, easy, and low cal!! I cooked the noodles, rinsed, and drained early in the day. Made the dressing also. Refrigerated them separately until about an hour before serving and then mixed veggies, noodles, and dressing together, put back in the refrig. Didn't add herbs til the last minute and it was so refreshing.There is definitely enough dressing.

    This would be a great summer salad, and you could adapt it to a lot of meats- chicken or shrimp, for example.

    I was asked to bring a pasta salad, and keep it light. This is it! I added bean sprouts and sliced snow peas for extra vegies.

    What a breath of fresh air...I love to watch Ellie's show. I thought this recipe had the right amount of taste/dressing for the noodles (which are very good. Don't get me wrong but it's nice to have a recipe with this much flavor that doesn't call for a stick of butter and a ton of salt.

    I'm always looking for new flavors done in an easy way and this is that type of salad. Very fresh tasting and the sobo noodles are a unique flavor. Will keep this in my food file for sure.

    The salad ingredients are delicious and fresh, but the real winner is the dressing. This is one of the best asian dressing recipes around and it will be a summer staple in my kitchen. A co-worker and I are cooking up uses for the dressing... from green salads to marinades.

    We enjoyed this noodle dish. Served as a main course it serves 2, provided you double the noodles (everything else stays the same. Add tofu and you have a complete meal. She calls it "lightly dressed", but I thought it had lots of flavor -- sour and spicy. Yummy!
