Bland! I don't know why...don't get me wrong, i eat raw salad on a daily basis prollly it's because I'm really not a fan of raw spinach, I prefer them cooked. I followed the recipe to a T. Nope, not my type of salad.

This is an amazing dish - I do add toasted almonds, and craisens to the bacon/onion mix, also a few cloves of garlic sautéed with the onions. I've never used canadian bacon, just 4 strips of good bacon. I also do not drain the bacon fat, her version is much healthier, but I'm not too concerned about that, the bacon fat just adds such amazing flavor. I do love the dressing, but I use just a packet of spiced apple cider mixed with 1/4 cup water and about a tablespoon or so of apple cider vinegar - let it boil, add a dab of spicy brown mustard, fresh ground pepper and kosher salt - its so so good. And you can keep the dressing and topping in separate containers in the frige and just use what you need - we use this as an appetizer salad for holiday dinners, then top the next day with leftover ham (usually honey baked : for a main dish salad!

Very tasty and filling even as dinner for 2. Didn't use bacon grease at all. Sauteed the onions & mushrooms in olive oil. Put them on the spinach. Then in the pan added Hormel real bacon bits with the Canadian Bacon and liquid, reduced the liquid, stirred in the dijon and S & P. Tasted just as good with less fat!! A keeper!!

This salad was polished off by me and my husband. I served it as a side dish with some Pasta Puttanesca and it was a wonderful accompaniment. The dressing is so fresh and healthy and warm. I used 5 oz of canadian bacon and omitted regular bacon. I also added craisins and honey roasted almonds. It was so good. Officially in the recipe box :

My husband and I are on a diet. We made this for dinner one night and it will be a regular thing in our house from now on! We did add a little balsamic to the mix as well as some peppers. (red, green and yellow We cut the mushrooms in half and added shrimp and used turkey bacon instead. It was fantastic, and recommend to try!

We made this recipe this week & because there is just 2 of us; only tossed the dressing with a portion of the salad. Discovered the dressing keeps in the fridge & is wonderful when microwaved. We like a bit more zing so will try again using a tarter apple cider or maybe a splash of balsamic. We consider this one a keeper!
