    I didn't have apple cider, just juice, but it still got rave reviews from the fam...Easy to make, and it's got BACON...nuf said...

    this was a great salad loved the warm tangy dressing with spinach perfect combo, i didnt have bacon so i used extra candian bacon, i served this salad with grill chicken. I will be making it again!!

    my boyfriend was very skeptical of this when i told him that i was going to make it. he's not a huge salad fan, esp. of spinach. he WOLFED it down! he loved it and i did too. Excellent!!

    This was a great recipe. Never would have thought of using apple cider, but it made a fantastic dressing. I added a little goat cheese on top and then it was perfect.

    I made this with all regular bacon instead of the Canadian bacon and used crimini mushrooms instead of button. I also sprinkled some toasted pecans on top. This was a super hit at a small dinner party last night! I will surely be making this again!

    I made this for a family get-together and it was a hit. One person even commented that it surpasses the family's traditional spinach salad by far :-/ I had to keep that one quiet!

    The dressing is good warm or cold. I made it before I went to the party and heated it up on the stove right before I served the salad.

    I love this recipe and have also found that I can do a lot of it ahead of time. Obviously, the bacon can be done ahead, but you can also cook the onions and mushrooms early and reserve them. Toss them into the vinegar mixture at the last minute to warm and serve!

    What a great low cal salad. Very low cal especially since you don't use any oil in the dressing. Great flavor from the onions and mushrooms. Will make again and may add some hard cooked eggs.
