The whole family loved this grilled cheese sandwich. They barely noticed the whole wheat bread (I have been trying to get them to convert from white bread for months, and they loved the cheddar/pepper-jack combination. I did cheat a little, by grilling the sandwiches in Smart Balance Light (maybe 2-3 tsp. per sandwich. It really made them taste like an old fashioned, decadent grilled cheese sandwich. I served them with some spicy, oven baked fries and a health salad. We all felt like we were pigging out on greasy "diner" food, but only I knew the healthy truth!

This is the best grilled cheese sandwich I have EVER had! A few people below said that the pepperjack and the onions didn't mix well - they were fine for me. Maybe there onions were not sauteed enough...?
It's nice to know you can make grilled cheese without the excess butter. This sandwich goes perfect with the salad she made this episode.
Thank you Ellie for a quick and delicious staple to our menu!

I made this twice, i like it, but the onions and the cheese kind of sit in your stomach and make you feel sick. i would recommend this without that spicy cheese though. only with chedder tastes SO much better and brings this healthy sandwich to a great start~

I was a little skeptical when I saw this recipe, but thought I'd try it anyway. The only things I did differently were to use Italian bread & mild cheddar, as I had them on hand. I did as others did & cooked them in the same pan I used to cook the onions & I also sprayed the pan lightly with cooking spray. My husband & I both loved them. Watch that first bite. They're very hot because of the tomatoes. Thanks Ellie.

This was amazing. I used provolone and cheddar because that was what we had on hand. We had it with spicy tomato soup so we didn't miss the heat from the pepper jack.

Another grand slam. I have yet to try one of her recipes that wasn't great.

I think I cut my cheese pieces too thick, because the combination made me sick afterwards. I usually love onions on everything, but on the grill cheese, it wasn't too good. Next time, I'll just stick to my usual Cheese with Tomatoes.

This was a very easy recipe. It added some different ingredients to a regular ol' grilled cheese. The end result was very tasty.

I went into this recipe not expecting anything special and was pleasantly surprised. The carmelized onions and tomato slices were a great addition to an old standard. I was a little skeptical of not using any butter or margarine on the outside of the bread, but decided to take the advice of a previous reviewer and simply used the pan the onions had been sauteed in(rather than cooking spray. Not only was the little bit of oil residue plenty to get a crisp, brown sandwich, but it tasted fine, too! It was also the first time I'd used the method of squashing down the sandwich with a heavy pan; I think that really helped make a nice, evenly browned surface. This will become the way we do grilled cheese sandwiches from now on!
