I love grilled cheese but have been avoiding it since it has very little nutritional value. I was so happy to try this recipe. I tried it and fell in love. I used provolone instead of pepper jack though. If you are not a big fan of tomatoes I found that brown them in the pan before adding them to the sandwiches makes them much more enjoyable.

I thought the pepper jack and other ingredients made this healthy sandwich very tasty. I used the same pan to grill the sandwiches that I did to cook the onions, that way it used a little of the oil that was left, but didn't add any 'extra' butter or oil for grilling.

Cooking spray is not a substitute for butter (or margarine when making a grilled cheese sandwich. The flavor it gives to the bread is just off; it makes it bitter rather than sweet.
This would make a good grilled cheese if it had butter. It doesn't take much, there's no need to slather it on, but it does take at least some.
