    My husband and I thoroughly enjoyed this meal! It was easy to make yet tasted very gourmet. I stuck closely to the recipe with only a few minor adjustments: I used yellow curry powder and red pepper flakes, and added 1 clove garlic. I also used Orange Roughy instead of Halibut since that is what I had on hand. I loved the lime juice added at the end with the cilantro. Great way to round out the flavor!

    This recipe was incredibly easy and had amazing flavors. The perfect combination of sweet, spicey and tart. I wasn't sure about the last addition of the scallions, cilantro and lime juice, but wow! It completely took the dish to another level. This will definitely be added to my collection of favorites!

    I served this meal to my husband and mother. I cut back by 1/2 tsp on the curry paste and only used 1/4 cup of cilantro leaves. I did this after reading the reviews. I would not do this again. Even though my husband and mother throught it was GREAT. I think it needed more spice. Next time I will follow the recipe to the letter. I also added some shrimp during the last two minutes of cooking. I will definitely make this meal again. I will also use it for company.

    I was a bit hesitant b/c I'm not a big fan of curry but oh my word am I ever glad I tried it. It is absolutely delicious, flavorful, light, and just a little spicy. You have to try it.

    I tried this recipe with asparagus instead of spinach. The broth has great flavor. It can be a bit too salty so it's better to taste it before adding any salt to it.

    Saw this today and made it tonight. It obviously works well with all kinds of fish from the reviews. I used haddock since I couldn't find halibut. It turned out wonderfully. I would like a hint more coconut in the broth. I topped the dish off with some scallions and a little basil. WOW! WOW! WOW!

    I doubled the amount of red curry paste, used a full can of full fat coconut milk, and added 2 tsp.of sugar to the broth. We loved this recipe and will make it again and again. It's easily as good as many of the dishes at my local Thai reataurant. I do realize it is not as healthy as Ellie's, but we loved it.
