I'll be making this one again. Didn't have red curry so I used the yellow I had on hand and it was still delicous. great week night meal.

This dish looked delicious on Ellie's show so I had to make it. It was excellent. I used tilapia instead of halibut and my family and I just loved it. It wasn't at all difficult to prepare and the leftovers were great for lunch.

I used regular curry powder for this recipe instead of Thia red curry paste as I could not find it at my local grocery store. I was still pleased with the flavor and will definitely make the dish again. Also, I tend to be a dessert addict and this recipe filled me up enough so that I didn't really feel like I needed dessert.

not bad. I added some extra liquid during the cooking and that ruined it a little. too much liquid and the coconut milk wasn't cooked thoroughly. so the whole thing was pretty heavy on the stomach. i'll try again soon though, i know this can be a great recipe.

I don't personally have to watch my weight with everything that I eat, but I like to maintain a healthy lifestyle. The only thing that I would change about this is using a whole-fat coconut milk for thickness, and maybe a tablespoon corn starch slurry. Overall very good, highlighted the natural taste of the halibut well!

I made this with scallops, which I sauteed a bit to brown them, and then added them to the sauce at the very end to finish cooking. It was very good, but seemed to be lacking something. I fixed that with the leftovers. I mixed everything together (scallops, sauce, spinach and rice, added the rest of the can of lite coconut milk, and some tamarind paste. BINGO ? that really did it. I think that next time I?d also add some garlic towards the end. All in all a very yummy recipe.

This recipe was fantastic! Halibut was $25 per lb., so I used the thickest pieces of talapia I could find. I also couln't find red curry paste - I made sort my own mashing red curry powder, garlic/onion powder and olive oil into a paste. The instant microwave brown rice was all the talk. My company went mad, mad, mad for all of it!
