Thank you so much for this recipe -- it's awesome! I made a few modifications to suit our tastes: Recommended modifications:
- use full fat coconut milk
- add a tablespoon of brown sugar
- add a tablespoon or so of ginger (powder or fresh
- add more red curry and some crushed red peppers to increase the heat
Also, I steamed the spinach in a big covered saute pan with a little olive oil, crushed fresh garlic and a tiny bit of sea salt. YUM!

...rate things online. I'm a passive internet user, but this recipe is perfection. Easy, delicious, with a wonderful kick. I've used the same recipe with shrimp, and it's equally as fabulous!

This recipe is so wonderful and it really can be altered easily to your liking. I MUST recommend putting fresh diced tomatoes on the top of your plated fish. If you do it once you will never eat it again without. Tastes like it was made for this recipe!!

I followed the recipe as directed, but added a bit more curry paste and some sriracha sauce to spice it up. I too thought the sauce was a bit too watery after the 5 minutes were up, so I ended up reducing it for a while longer (like 8 more min and it came out SO good.

This is a DELICIOUS, fresh-tasting and healthy dish. I sauteed some baby bok choy with little mushrooms instead of the spinach, and added some diced spicy Thai chilies to the broth. The fish was melt-in-your mouth delicious, and the dish is beautiful. This is definitely going on regular rotation!

Last night my boyfriend and I made this recipe and it was amazing! However, I like my curry on a spicy side, so we did add a bit of a red curry in the mix and a 1/2 tea spoon of chushed red pepers. The halibut was so moist , that it melted in our mouths, the cook time of 7 min was perfect! Thanks a lot, it will be one of my favs!!!!!
