As others have stated a good base chili that needs a little more ingredients. My addition or substitution was to replace the two cups of water with two cups of beer.

Not sure what people mean about being bland...I used the exact amount of spices and chipotle peppers and it definitely has a kick to it. Actually too spicy for my son but perfect for me.

Wonderful Chili, I love the smoky flavor that the chipotle peppers add to it.

This Chili was simply fabulous! The recipe says season to taste so be sure to add some things to give it some flavor. I decided to cook the vegies and beef as stated in recipe in skillet and then I put it all in the slow cooker. I added Chili Powder (not sure how much just a good amount1 Tbsp of Garlic Salt, 3 Tbsp sugar, 1 can of tomato Paste, 1/4 Tsp of cin, 1 more chile than called for and also a little more of the adobo sauce. I also added some hot sauce Crystal to be exact and some salt and pepper. Served with cheese on top and it was really good! Thank you to all of you who posted your comments about the ways you spiced it up, it really helped. We will definitely be having this dish again. OH and I also used the Muir Glen Organic Tomatoes, they are very tasty.

I have made this chili several times and I think its pretty good. Some of the other posters mentioned they thought it was quite bland, yeah maybe. Personally, I disagree. I tend to tweak a lot of my recipes but this one is a pretty good one...its simple and gives you some room to experiment.

Using flavorful tomatoes is key. Muir Glen Organic Tomatoes are best. They make several fire roasted varieties which are perfect for chili. I used the Adobo seasoned ones this time and last time I used chipotle seasoned. I have also used the fire roasted with green chilies

Make sure your spices are fresh. I found some ancho chili and chipotle chili powder which make a huge difference in the flavor.

When browning the beef, I added 1/4c chicken stock (better than bullion seasoned with cumin, don't add it all at once the meat will steam rather than brown...let it evaporate as you go. I thought this added a nice touch.

Yummy! I just love Ellie's recipes! I used leftover turkey from Thanksgiving instead of beef and it was wonderful. I also added a bit of chili powder and some cilantro at the end with the beans.

I thought this chili was "pretty good". I would recommend making it one day and eating it the next day, it is way better! My husband and I had it for dinner the same day that I made it, I thought it was ok and he didn't like it. I ate it for lunch the next day and it was delicious with a little cheese and corn chips on top.
