This recipe is great! I'm not a huge fan of spicy, but I used what the recipe called for anyway with the chipotle in adobo and it was just right. The flavor that it adds is fantastic. The only change I made was that I left out the kidney beans since my son doesn't care for them. When it was ready, I topped it with a mexican cheese blend, chopped fresh tomatoes and chopped fresh avocado. MMMMM!!

Has anyone else noticed that people give this recipe 5 stars, and then explain a long list of changes they did? People, that's not a 5 star recipe- that's a fair recipe or starting point that is doctored up. Misleads other people who think they can follow the recipe as is and get great results. I made it "as is" and it was horrible- bland, bland , bland. I cook all the time and can make cardboard taste good. This is just not a good recipe. Sorry!!!

This chili is absolutely AWESOME!!! I thought the carrots would taste out of place, but they are a great addition. I have made with beef and turkey and they are both so good. It's perfect as is. Thanks, Ellie!!!

This Chili is delicious and it is very hard to just eat one bowl of it! This is great if you work during the week and don't have much time to cook. I will usually cook it on Sunday and have enough for the entire week!

Since the first time preparing Ellie's "Three Bean Chili" my family has it on demand. They love it! You would never believe how hearty it looks and taste. It adds so many nutrients in one meal and is very inexpensive to make. Talk about filling....you won't leave the table hungry.

This is excellent chili. I definitely support having cornbread with it and the cheese on top (I used cheddar. I almost think that sour cream might make it too creamy as the flavors are already more subtle than most chili's. I also ended up using 3 chipotles and 3 teaspoons of the adobo sauce and it was just fine. I have little tolerance for spicy food and I found it added just the right amount of warmth and flavor.

The best chili ever! I've made this a number of times. The first time I used 3 chilis and it was so hot (still so good but I love spicy. Since I've used the recommended amount and it's so good! I've also made it with turkey (really good. Because I always had left over adobe peppers and sauce from a can I froze the left-overs and now just slice off a piece about the size of a pepper and it's perfect. The whole family loves this dish!

I'm not a huge chili fan but I can not get enough off this dish! I've just recently become interested in cooking and I have made this about four times in less than three weeks! I highly recommend it and just for a little kick to it I add a few pinches of red pepper flakes. (Only do this if you like your food more on the spicy side.
