    Excellent! We made it with ground bison, omitted the chipotle and adobo (two yr old in house, and added corn, plus a dollop of sour cream left from Ellie's cherry ricotta cheesecake. Happy belly's here!

    This was really good. I am from the south and I definitely love meat only chili but I figured I would try this because it is healthier. IT WAS DELICIOUS! I change things a little by taking out the carrots, because that didn't sound to appealing and I like things a little spicier so I used 3 chipotles in adobo and 3 teaspoons of the adobo sauce. Also, I added about a 1/3 of water when I added the beans because mine looked as though it was going to burn. Lastly, I didn't do the whole partially covered thing when I added the beans! I made it with some cornbread on the side and added a little cheese on top of the chili and it was yummy!

    Holy smokes, this recipe is FANTASTIC. I made yummy noises the whole time. I did use green peppers instead of the red ones (price and I also thought that the 2 cups of water was odd... so I did 1 c. 99% fat free chicken broth, and 1/2 c. water. I like a thicker chili anyways. Oh! I also added a T or two of chili powder. I would make this over and over. Great recipe.

    I might have to try this one again, but I couldn't find the chipotles in adobo sauce in the grocery store and it made a big difference. I tried to roast some jalapenos in place of the chipotles, but it was not nearly spicy enough and pretty bland. I recommend not making this unless you have all of the exact ingredients.

    So good! We added 1 jalapeño and 1 red chili for added heat. We like it spicy! Perfect consistency and delicious! We also used ground bison because it's a little leaner and so yummy!

    Easy, healthy and delicious. This will be our staple chili from now on. Doubled the oregano and added an extra chipotle.

    Oh my wow! This recipe was amazing. I did make it too spicy for my mom's taste at first so I just added some of the diced chili tomatoes that you can buy in the grocery store. By doing so, this recipe was PERFECT! I definitely would not change a thing, however, I did have to omit the red bell pepper because my dad just doesn't do them...otherwise, I will be making it again this week!
